As I said, I made the dough for these last week and kept it wrapped
and refrigerated until today. I did up the molasses to 2 Tbsp. and
I've just sampled two of them. Wow! These are really good cookies
and I will like not only sharing them, but keeping two dozen for my
picky self to enjoy. Really, treally good and simple cookies, thank
you again for these!

Coconut Oatmeal Cookies (Picky made smaller, 5 dozen)
1 cup flour
½ tsp salt
1 tsp baking soda
1 tsp cinnamon
½ tsp allspice
½ tsp nutmeg
2 cups sugar
1-2 tsp molasses
1 cup vegetable oil
2 eggs
1 tsp vanilla
1 cup coconut
3 cups rolled oats
½ cup toasted nuts

1. Combine dry ingredients.
2. Beat sugar, molasses, oil, and eggs. Add vanilla. Beat in coconut,
then oats, then flour mixture. Dough will be stiff but moist. If it
seems dry, add oil by teaspoons.
3. Chill dough 2 hours or longer.
4. Set oven to 350º. Prepare baking sheets.
5. Using a 1" scoop, scoop balls of dough onto and place on sheets
2" apart. Flatten to disks 1/3" thick.
6. Bake 10-12 minutes for chewy cookies. Bake 1-2 minutes longer for
crisp cookies.

I'm amazed the dough stayed coherent. Last time I chilled drop cookie
dough for more than 24 hrs, they wouldn't stick together at all. Maybe
the difference is oil vs. butter. Anyway, glad you like them.

Perhaps you are right, butter chills to hard causing it to take longer
getting back to smooth, whereas the oil stays much more liquid.

I just got back home from deliveries to the Vet, my Dentist, and to
little Chloe next door...everyone loves them! These cookies have
earned a first place spot in my keep on hand all the time container,
for sure.

I use a very similar recipe for chocolate chip cookies. Butter instead
of oil, omit the oats, halve the coconut, and increase the flour.

I made them on Sunday, but I think I converted them back to the
original because I used light brown sugar instead of molasses and
white sugar. I added chocolate chips to the batter and left coconut
out of half of it because one person didn't like coconut. Yes, it was
very good. Thanks, George.

PS: My 13 month old granddaughter help me make the cookies and she was
so excited! It was the first time she got to cook for real instead of
pretending with a bowl and spoon. We had cookie dough all over
everything, but she was one happy little child!

I am so jealous. My grans are nearing all grown up now and are two
driving hours away. The eldest one, Tiara, is two years married,
Garrett starts college this year, while Cheylin begins highschool. My
son used to love cooking times with me as he grew up and now he is
*the* cook for all his friends. I think that cooking, baking, and
gathering the best food ingredients for same is one of the greater
things we can teach our youngsters and I so miss having having one or
a few right here for that.

I have a feeling Tiara will be solving your problem in a couple of
years. Hopefully, she lives close enough that you'll be able to visit
with the newest generation as much as you wish!
