Default Cookie Recipe

These came out really good with Ambrosia apples, but I imagine the
zucchini would also be nice. The only change I made was to up the
milk to 1/3 cup so as to add Coconut Milk Powder.

Soft Zucchini or Apple Spice - Bake at 350
for 12-14 minutes - Makes over 4 dozen

1/2 cup softened butter
1 cup packed brown sugar
1 egg
1-3/4 cups all-purpose flour
2 tsp. baking powder
3/4 tsp. ground cinnamon
1/2 tsp. salt
1/4 tsp. ground nutmeg
1/8 tsp. ground clove
1/4 cup milk
1-1/2 cups grated zucchini or peeled Ambrosia Apple
1/2 cup chopped walnuts
1/2 cup raisins
1 tsp. orange zest

Cream butter and brown sugar; add the egg and mix well.

Combine the dry ingredients and add them alternately with milk to the
creamed mixture.

Stir in zucchini or apple, nuts, raisins, and orange peel.

Drop by tsp. scoop 2" apart onto greased baking sheets.

Bake until edges are lightly browned and cookies are set.
