I'm using your recipe for Creamy Polenta With Wild Mushroom Ragout

as my inspiration for dinner tonight. Not planning to follow it to a
T because I don't have multiple kinds of mushrooms and no heavy cream,
so that's why I'm calling it "inspiration". However, I want some
clarification about the polenta. Does your recipe call for "instant"
polenta? I thought regular polenta takes longer to cook!

No, it's regular polenta. But by the time you see this you probably
will already be done with dinner.

I used the oven method - chopped up rosemary, thyme and marjoram to
put in it along with the cheese and it was really yummy. I haven't
made polenta very much and I've never cooked it with milk before, but
I'm going to do that again.... it was *that* good.

I plan to fry up a square of leftover polenta tomorrow for breakfast
and top it with a poached egg. I've discovered that I can send fried
polenta with poached egg on top into another strata by drizzling real
maple syrup around it on the plate. Oh, so good!

Yay.! So glad you enjoyed it.

How was the combo with the mushroom ragout? It really doesn't matter
what kinds of mushrooms you use, different ones give a bit of a
different flavor profile, but they are all good as far as I'm
concerned.

I loved it! However, I didn't make the mushroom mixture liquid enough
to call it ragout. Hubby wanted regular sauteed mushrooms (we had a
grilled steak with it too) and I wanted ragout, so I met our wants in
the middle with all the ragout flavors but not as much liquid. Did
that make any sense?

Yup. Perfect sense. I haven't made that dish in a while, I'm going
to have to make it again soon now that you have reminded me.
