One of my fondest childhood memories was that lentil soup with mashed potatoes. :-) I think I was maybe 4..... Alternately, add some eggs, beat them well and make potato pancakes. A sprinkling of bacon bits and off you go! K. -- Sprout the Mung Bean to reply... >,,<Cat's Haven Hobby Farm>,,<Katraatcenturyteldotnet>,,< http://cgi6.ebay.com/ws/eBayISAPI.dl...user id=katra |

Leave it sort of pinkish, since you don't want it overcooked. Drain off any excess fat and add the onion. Sauté until the onions are translucent, then add mushrooms, vegetables and seasonings; sauté a minute or two longer. Mix in the gravy and put into a baking dish. Cover with mashed potatoes and put into a 350ºF. oven for about 45 minutes, until the potatoes are beginning to brown and get crispy around the edges. Remove from the oven, make a well in the center and add a gob of butter (optional). Serve hot. Many variations are possible using different or additional veggies and meat. Rich |
