OOh, they make a _wonderful_ additive to soups!
One of my fondest childhood memories was that lentil soup with mashed
potatoes. :-) I think I was maybe 4.....

Alternately, add some eggs, beat them well and make potato pancakes. A
sprinkling of bacon bits and off you go!

Is this a trick question? Heat the mashed potatoes up and
eat them with steak, turkey, whatever? No need for a special
recipe in that situation.

Shepards Pie -- Basic method: Brown some ground beef along with
chopped onions in a frying pan; spread beef 'n onion mix into the
bottom of an oven proof casserole; spread mashed taters on top; bake
at 325F for a half hour or so or until the taters are lighlty browned
on top. Many variations are possible using different or additional
veggies and meat.
