Remember those little neighborhood grocery stores that were in little
white wood frame houses? When I was in high school we would go in and request x pounds of sirloin steak. The grocerman, the only employee, would go into his cooler bring out an enormous hanging hunk of raw cow, and take his knife and cut us our steaks. Sirloin back then looked cooked tasted different. Sigh..the good old days. I haven't had a good sirloin in years-I don't buy them anymore. Chuck eye is best now, provided its fresh-it goes bad quickly when it goes because of the high amount of fat. It has a high degree of flavor but its cut shape is awkward. I bought NY strip steak last night-very disappointing and $2 more pr pound than chuck eye. My last ribeye was disappointing also. I bought these at the best meat counter in town (pop ~150,000) in an ag state. I really don't want to be vegetarian but the producers are driving me in that direction! |
