Default 2012-06-24 Dinner

Lin's been pining for homemade pizza, so I'm making two pizzas for
dinner. One will be topped with pepperoni and roasted yellow bell
pepper; the other one will be topped with blistered zucchini (from our
garden) and caramelized onions.

I got some figs at the farmers' market yesterday, so dessert will be
roasted figs with fresh cheese (what many incorrectly call ricotta) and
Vin Santo which I'll reduce to a syrup.

Both pizzas will have a homemade tomato sauce and mozzarella, but I'm
not planning on adding any toppings other than what I already mentioned.
There will be lots of zucchini on that one pizza.

You could adapt this recipe Chris. I was thinking that roasted tomato
pesto would be good instead of tomato jam for pizza.

I make pizza at least 3 times a month.
Make a wet pizza ball and let it rise only once, like a ciabatta bread.
Pizza must be baked on a decent stone heated to 550F or whatever your oven
will go to.
You don't need to roast the pepper. Just put it on top.
Homemade tomato sauce is a real positive.
Make sure you use a good cheese. All mozarellas are pretty bad. We use a
provolene from Costco we really like.
Pizza with carmelized onion, or ****aladiere, is a great dish, rarely seen
or heard of these days. Traditionally it's topped with anchovies.
