Lin's been pining for homemade pizza, so I'm making two pizzas for
dinner. One will be topped with pepperoni and roasted yellow bell pepper; the other one will be topped with blistered zucchini (from our garden) and caramelized onions. I got some figs at the farmers' market yesterday, so dessert will be roasted figs with fresh cheese (what many incorrectly call ricotta) and Vin Santo which I'll reduce to a syrup. Bob |

Make a wet pizza ball and let it rise only once, like a ciabatta bread. Pizza must be baked on a decent stone heated to 550F or whatever your oven will go to. You don't need to roast the pepper. Just put it on top. Homemade tomato sauce is a real positive. Make sure you use a good cheese. All mozarellas are pretty bad. We use a provolene from Costco we really like. Pizza with carmelized onion, or ****aladiere, is a great dish, rarely seen or heard of these days. Traditionally it's topped with anchovies. Kent |
