Default In Honor of Boli - cornmeal griddle cakes

Later in the morning (much later!) I'll be making breakfast. It's not an
every day thing for me but I was thinking about this last night. Boli's
grandmother made cornmeal griddle cakes (aka cornmeal pancakes). This is
one of his signature dishes, direct from the RFC website:

E. Walker's Cornmeal Griddle Cakes

E Walker was Boli's grandmother, and the recipe has been passed down through
several generations.

1 cup corn meal
1 heaping teaspoon, to 1 level tablespoon shortening
(I usually use about 2 teaspoons)
3/4 cup hot water - just boiled
1 slightly beaten egg
1 tsp. salt
2 tsp. baking powder
1 cup milk - whole milk works best

Mix the shortening and the cornmeal, pour in the hot water. Mix till meal is
in a ball. Mix in egg. Add salt and baking powder. Mix in milk about a half
cup at a time. Batter should be very thin. Cook on high heat of griddle or
waffle iron with griddle surfaces.

Thanks, Jill. They sound kind of like cornmeal mush, only fast and
thinner and with an egg. ;-) Well, maybe not so much like mush after
all. Aren't these like Johnny cakes? I'll have to check a recipe.
