Later in the morning (much later!) I'll be making breakfast. It's not an
every day thing for me but I was thinking about this last night. Boli's grandmother made cornmeal griddle cakes (aka cornmeal pancakes). This is one of his signature dishes, direct from the RFC website: E. Walker's Cornmeal Griddle Cakes E Walker was Boli's grandmother, and the recipe has been passed down through several generations. 1 cup corn meal 1 heaping teaspoon, to 1 level tablespoon shortening (I usually use about 2 teaspoons) 3/4 cup hot water - just boiled 1 slightly beaten egg 1 tsp. salt 2 tsp. baking powder 1 cup milk - whole milk works best Mix the shortening and the cornmeal, pour in the hot water. Mix till meal is in a ball. Mix in egg. Add salt and baking powder. Mix in milk about a half cup at a time. Batter should be very thin. Cook on high heat of griddle or waffle iron with griddle surfaces. ***************** I remember talking with him about these griddle cakes. I've made them before, but not in years. They're really tasty ![]() Jill |

They sound kind of like cornmeal mush, only fast and thinner and with an egg. ;-) Well, maybe not so much like mush after all. Aren't these like Johnny cakes? I'll have to check a recipe. N. |
