My brother made a couple of these last week to try out the recipe. It
takes 3 pounds of strawberries; you slice a pound of the good fresh berries, and cook down the rest with sugar and a small amount of gelatin to make kind of a jam (the recipe suggests using frozen for that because they are cheaper) Then combine the two pour into a baked pie shell. You can look up the recipe. It was good, I didn't like the crust. Also the pie was a little small, and Daughter thought it was too sweet and Dad thought it wasn't sweet enough. (that means it was probably just right) He didn't make the topping, we just ate it with ice cream. I want to make it in a 10" pie shell rather than an 8". Rather than double the recipe, make up the difference with a cream cheese custard layer under the berries. Something like Jello No-Bake Cheesecake (I know that stuff is nasty, but I like it), made with real cream cheese instead of a mix. Got any ideas, or recipes? -Bob |
