Default Strawberry Icebox Pie from America's Test Kitchen

My brother made a couple of these last week to try out the recipe. It
takes 3 pounds of strawberries; you slice a pound of the good fresh
berries, and cook down the rest with sugar and a small amount of gelatin
to make kind of a jam (the recipe suggests using frozen for that because
they are cheaper) Then combine the two pour into a baked pie shell.
You can look up the recipe.

It was good, I didn't like the crust. Also the pie was a little small,
and Daughter thought it was too sweet and Dad thought it wasn't sweet
enough. (that means it was probably just right) He didn't make the
topping, we just ate it with ice cream.

I want to make it in a 10" pie shell rather than an 8". Rather than
double the recipe, make up the difference with a cream cheese custard
layer under the berries. Something like Jello No-Bake Cheesecake (I know
that stuff is nasty, but I like it), made with real cream cheese instead
of a mix.

Got any ideas, or recipes?

Have you considered panna cotta? You could Google "cream cheese panna
cotta recipe" and there are lots of recipes to look at... even one by
Martha Stewart.

This just came to my inbox - I bet the lemony bottom layer would taste
very good under your strawberry layer.

You're welcome. Forget that particular recipe and find one that works
for you. The main idea was about putting a lemony custard base under
your strawberries.

I just ran across this recipe - it's cream cheese... no gelatin
though.

Strawberry Pie

Recipe By :
Serving Size : 8 Preparation Time :0:00
Categories :

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 Each Pie Crust (9 Inch) -- baked
1 1/2 Cups Water
1 1/2 Cups Sugar
4 Tablespoons Cornstarch
1 Box Strawberry Gelatin Powder -- Small
1 Quart Strawberries, Sliced

Bring water, sugar and cornstarch to a boil. Cook until mixture turns
clear. Remove from heat and stir in gelatin. Let cool.

Stir strawberries into cooled gelatin mixture. Pour mixture into pie
shell. Cover the top with whipped cream or whipped topping.

Keep refrigerated.
