$1900 for a lousy kitchen knife...no thanks. Probably get one from China for
less than $5 that will perform just as well.

There is a fellow here who makes specialty knives -- hunting,
whatever. He makes a "very" good living at it and still has a several
year waiting list. I think when you enter this price range you are in
the category of collector buying art. I can't imagine a chef buying a
knife like this and leaving it in the restaurant kitchen.

Almost $2,000 for a 6 inch knife to cut an apple? I will suppose this
is a sushi chef's knife, because nothing else would even remotely make
sense. No wonder sushi is so expensive if they're paying such
exorbitant prices for knives.

Sushi aside, have you ever checked out the cost of barber's scissors?
They look like ordinary scissors, but they're not. They cost ten times
what you'd guess.

LOL...the $1900 tag on that knife turned me into a Benedict Arnold. Loyalty
can be bought but that is too high a price to pay for a kitchen knife to
peel spuds with.

With my luck, I'd throw it out with the potato skins. A friend did just that with a diamond ring she took off when in a hurry to make a potato salad one night. The garbage was picked up the next morning in her city, of course, after she missed the ring.

He's not trying to sell many. If you read the description you'll see
that it's a hand-made one-off (and by "hand made" I mean he started with
iron ore and first made the steel, by hand) prototype.

That's like clippers for dogs, especially the ones made for show dogs
because they need the precision. I know someone who pays a lot of money
to have her clipper blades sharpened, but not in the $thousands.

That sucks! I'm sure there are things I've accidentally thrown out

So true! When I was a hairdresser in my first life (1985ish), I paid
250.00 for a pair of "Butterfly" shears from Japan. Freakin' awesome
to work with, but I dropped them after using them for only a week or 2
and they got a little nick in them. Instead of cutting like butter,
the hair just kinda curled over the nick. I think I cried a little...

That's a multi-millionaire's knife not made for an ordinary kitchen. A
yacht galley, perhaps?. Kind of obscene, but I guess it's a case of "if
you've got it, flaunt it."

Nope. I think I'll take a chef's knife and a steel. I do have other
knives such as paring knives and a serrated bread knife. Perfectly
suited to my needs. They sure as hell didn't cost $1900!
