Default Galangal snaps gluten free. Yum

There are the muffins made with flax seen meal that were invented by the
woman named Doobie. I think that was her last name not nickname. They
included picking random spices as a common variation.

I've had muffins with ginger. Should work great with galangal.

Oh sure, but we're speaking of cookies. Can't say I have
experimented with LC cookies at all. But sure, perhaps this would
be just as good in a cake or muffin form.

Check. To me cookies can be gluten free or wheat free but I've never
tried to make them low carb.

There was a tray of galangal snaps in the freezer ready to thaw and
bake. I ate the last of that batch today.

Lucky you! I have some LC cookie recipes and will see if any of
them look a) plausible, and b) like they'd lend themselves to that
type of flavoring.
