While watermelons are still plentiful [though in my area at least, not
as good or as cheap as last year] you owe it yourself to try one of these recipes- http://www.thekitchn.com/wake-up-you...nt-175834?utm_ I posted this last year and nb doubted it could be good--- but I never heard if he tried it; To 4 cups of 1/2" cubes of watermelon- 12g of chopped mint leaves [about 1/2 cup]; 125g crumbled feta [about 1 cup]; 2 T olive oil. I eat watermelon all the time, have a half a small one in the fridge now, for tonight. I rarely use watermelon in recipes, sometimes a nice garnish for alcoholic cocktails... instead of ice cubes I would add frozen balled watermelon to a bowl of punch. |

Nor are my daughter and I fans. She had it at a party last summer, and wouldn't have taken it if she'd known the green bits were mint. Her enthusiasm for it encouraged me to try it with the mint. [the mint I use is a fresh cut 'Chocolate mint'-- it is strong, but what I would call a 'heavy' mint flavor] There are some other good looking ones on the links but I haven't tried them yet---- Feta *really* is a great match for watermelon. You can add additional things like orange segments and nuts. I can understand why less adventuresome folks might not try it but consider say a Greek salad that has feta and olive oil as major components. |

Fact is that I was thinking of getting some watermelon and trying a salad like this but didn't have a recipe. If I had been craving it more I would have looked harder. No watermelon in the house right now and we are gong away for a few days. Maybe I will try it when we get back. |
