Default Holiday roll up potluck ideas?

The holidays at the nursing home are very stressfull as staff try to do extra things for all the resdietns. As a stress reducer for staff ( they love potlucks) we are thinking of doing a "Roll thru the Holidays" pot luck at work. sort of a holiday social for the entire building. The theme would be Things that are rolled. That way people can have little bites of treats, easy to walk around with. I was thinking pinwheels, meat roll ups, salad and veggie rollups, cinn. rolls, ect. I was kicking around a vietnamese pate banh mi roll up. Anyone have any unique ideas?

I love them but they tend to fall apart pretty quickly - not sure if you
could walk around with them.

Is this just for one day, or a continuous thing over a week or two?

You can roll up lots of savory things in tortillas or thinly sliced
bread. Many of these would be good on small dinner rolls (keeping the
roll theme)

cream cheese mixed with chopped black or green olives

thinly sliced chicken with cranberry relish or chutney

ground ham and sweet pickle relish with a little mayo

leftover roast beef or pot roast ground with horseradish

cream cheese with chutney or hot pepper jelly

Hummus rolled in tortillas with roasted red peppers

Let me think about this some more.

It is just one day. Sort of a thank you for staff during stressful time. We used to have punch and mint brownies but we have been trying to change things up the last couple years. I appreciate the ideas!

I have two favorite roll-up type appetizers that always go over well
whenever I make them.

Tortilla Roll-ups

1 pkg. (8 oz.) cream cheese, softened
1 container (8 oz.) sour cream
1 can (4 oz.) chopped green chilies, drained
1 cup (or more) shredded Cheddar cheese
Seasoned salt, to taste
Garlic powder, to taste
1 pkg. flour tortillas

Mix ingredients all together well, except for tortillas and spread
evenly on the tortillas. Roll up and refrigerate for at least 2 hours.
Cut into bite-sized rolls with a sharp knife. Can dip in salsa, if
desired.

"Those Pickle Things"

1 jar baby size dill pickles
1 pkg. soft cream cheese
1 jar sliced dried beef
1 can pitted black olives

Spread a thin layer of cream cheese over slices of dried beef. Roll a
pickle up inside. Close with a toothpick and top off with a olive.

Hope these will help.

We've made this one a few times and it's really good.

Mushroom Paté en Baguette
Mushrooms and herbs are blended into a savory paté and stuffed into a
hollowed-out loaf of French bread. To serve, slice into thin rounds,
revealing a circle of bread surrounding a disc of pate
1/2 cup onion, chopped
1 tablespoon olive oil
1/4 cup sake or dry sherry
1/2 cup chopped green onions, including green tops
2 teaspoons minced garlic
1 1/2 cups sliced mushrooms
1/2 cup minced celery
1/2 cup almonds or walnuts, minced
1/2 cup minced parsley
1 cup rye bread crumbs
1 teaspoon ground dried rosemary
1 teaspoon dried thyme
1 tablespoon soy sauce
1 teaspoon salt
1/2 teaspoon dried basil
1/4 teaspoon dried oregano
1 baguette

In a large skillet over medium-high heat, sauté onion in olive oil and
sherry until soft but not browned. Add green onions, garlic and
mushrooms, and continue to cook for 5 minutes.

When mushrooms begin to release their juice, add celery, walnuts and
parsley, and cook 3 minutes longer.

Spoon sautéed vegetables into a large bowl. Add rye bread crumbs,
rosemary, thyme, soy sauce, salt, basil, and oregano. Purée half of
mixture in a blender and mix well with paté remaining in bowl until it
reaches a paste-like consistency.

Cut baguette in half lengthwise and slice off each end. With your
fingers, remove the soft center of the loaf, hollowing out top and
bottom sections. Stuff paté into the cavity, replace top of bread,
snugly wrap in plastic wrap, and chill for 2 hours or more. To serve,
slice baguette into rounds.

Using a flour tortilla or piadina, top it as you prefer, roll it up and then
cut the roll into many slices: nice to look at, easy and good. A classic
here is piadina with lettuce, ham and mozzarella, once it's cooked you roll
it instead of plying it in two, wait for it to cool down a bit otherwise
melt mozz would make a mess and then cut it.

I am often asked to bring Polish Roses to gatherings of all sorts.
How they got that name I cannot tell you, but they do go over well at
parties or on a busy day at home snack tray. The ingredients are a
jar of dried beef slices (the really thin ones), a bunch or two of the
skinniest scallions you can get and room temperature cream cheese.

Snip off the root end and trim the scallion green ends so that the
entire scallion is just two inches longer than the diameter of a beef
slice. Spread a one-eighth layer of cream cheese onto a beef slice
and sprinkle fresh-ground pepper on (no salt needed at all), then roll
a scallion up inside to end up with cylinders. Refrigerate
immediately and do serve them cold. If making ahead of need, tightly
wrap the "roses" in plastic wrap to end up with a solid cylinder of
them to refrigerate so that the scallion green ends cannot curl as
they age as bit.
