I once liked Hollandaise sauce with asparagus but I don't use butter any
more. Has anyone suggestions for other sauces? I personally don't like sweet sauces much with vegetables but I have found lemon juice with a sprinkling of Parmesan very acceptable. -- Jim Silverton (Potomac, MD) Extraneous "not" in Reply To. |

I see that you've not exactly been buried in replies there, James :-) Not-Hollandaise things I've tried and liked: 1) Hummus (your favorite variation) with a bit of lemon juice to thin it. Cold with raw asparagus, warm with cooked. 2) Nut "butters," particularly almond. Just nuts whizzed in the food processor with a little liquid. A little liqueur of your choice as a moistener/flavorizer and/or lots of pepper. Same deal: cold with raw asparagus, warm with cooked. -- Silvar Beitel very occasional poster |
