Default REC: ANZAC Biscuits

ANZAC Biscuits - an Australian recipe
These biscuits were originally prepared for shipment to Australian and
New Zealand troops stationed in Europe and the Middle East. They were
made from ingredients which would not spoil during the shipment from
Australia/New Zealand to the theater of war. Use of the word "ANZAC"
is protected under Australian law but is permitted with recipes such
as the one below, which was found at the Australian War Memorial. The
word "cookie" may not be used to refer to this recipe.

1 cup flour
1 cup sugar
1 cup rolled oats
1 cup coconut
4 ounces butter
1 Tbsp treacle
2 Tbsp boiling water
1 tsp baking soda

Pre-heat oven to 350° F.
Grease a cookie sheet.
Combine the flour, sugar, rolled oats, and coconut.
Melt the butter and treacle together.
Dissolve the baking soda in the water.
Add the baking soda solution to the butter.
Mix the butter mixture into the dry ingredients.
Drop by teaspoons onto the baking sheet, allowing room for spreading.
Bake until golden, usually 10 to 15 minutes.
Allow to cool on the baking sheet for a few minutes.
Transfer to wire racks and allow to finish cooling.

I'll call it a cookie if I damn well please. Jeez!

I'll even call it an ANZAC cookie, and nobody can stop me, not even in
Australia.

I do love those ANZACs, and their history, though.
