It's not just a Patti Smith song:

Laziness/low standards B. You think it's yummy C. Where the heck are the kidneys? If C, then they are along the spine near the back of the bird. Think chicken leg quarter. That red stuff in the pelvic area, that's kidney. I don't believe the kidneys would be in the pelvis. Sometimes I remove a yellow gland, 1/4 inch long and kidney-shaped, from the middle of the spine where a kidney should be. > I eat them. I thought they weren't sold in parts until the 80's. I remember cutting up chickens in the 70's, and they seemed to have more sinew later in the 80's and ever since. Things changed in ranching. Offal's a > > big no-no. I like beef and pork liver, steak and kidney pie, have eaten Chinese style pork tripe, beef tongue, beef heart, BUT I HATE CHICKEN LIVER and I HATE CHICKEN KIDNEYS. It has nothing to do with being Anglo or Australian Aborigine or Bantu. Some offal is good and some is damned AWFUL. |
