Leaving the kidneys in the chicken before you cook it is gross. Nasty
little **** factories.

What's your reason for not removing them?

A. Laziness/low standards
B. You think it's yummy
C. Where the heck are the kidneys?

If C, then they are along the spine near the back of the bird. Think
chicken leg quarter. That red stuff in the pelvic area, that's
kidney. All it takes is a finger, running water and preferably a
garbage disposal to dispose of the **** factories.

But I do, I do.

When I joint a chicken, I leave the thighs up to the back bone. I
break the joints alongside the back bone, and then cut through. Then I
remove the kidneys with my index finger, and rinse.

I don't believe the kidneys would be in the pelvis. Sometimes I remove a
yellow gland, 1/4 inch long and kidney-shaped, from the middle of the spine
where a kidney should be.

I would have to force myself to eat them. They sour the flavor of the dark
meat even if I don't eat them. Maybe adding them to chopped liver makes
sense.

I agree, but It takes me more like 15-20 seconds, and I was surprised
at how many folks like their taste. Most of the folks who responded
chose B.

I assume that those are adrenals, but that's only an educated guess.
As Steve W pointed out, I used to think that the kidneys were
lymphatic tissue.

You mean the pre-cut parts? I thought they weren't sold in parts until the
80's.

I remember cutting up chickens in the 70's, and they seemed to have more
sinew later in the 80's and ever since. Things changed in ranching. Veal
chops were the size of lamb chops in the 70's.

I feed my cat 9 Lives Ocean Whitefish Dinner. It's perfectly
wholesome, but I wouldn't eat it.

But that's still the case. I'll eat heart. I don't particularly like
it, but I'll eat it. Same with tongue, provided it has the surface
removed. I'll eat gizzards too, same thing. Livers, pancreas,
uterus, kidneys, gonads, brains, no way.

I like beef and pork liver, steak and kidney pie, have eaten Chinese style pork tripe, beef tongue, beef heart, BUT I HATE CHICKEN LIVER and I HATE CHICKEN KIDNEYS. It has nothing to do with being Anglo or Australian Aborigine or Bantu. Some offal is good and some is damned AWFUL.
