That's it exactly and what I do is to double the sugar and double the milk
to make the thin ones I like.

I bought a 20$ carbon steel crèpiere. I would not use non-stick
surface for that. What you need is a thin metal spatula that bends
a little when you press it. Luckily, I have my mother's old
spatula from 1946. Still one of the most consistently useful
things in the kitchen.

I wouldn't use a non-stick surface for pancakes, either. On the rare
occasions I make pancakes, I use a lightly greased cast iron griddle (handed
down from my grandmother to my mother to me). It is perfect for cooking
pancakes. I, too, have a thin, fairly flexible metal spatula that belonged
to my mom. It's the perfect implement for turning pancakes just after
they've started bubbling a little on top.

I've have had mornings like that-you left out yanking open the freezer
door and having a frozen steak fall on your big toe. You see, you have
to wake up before you begin cooking in the morning.

I hate pancakes so your first mistake was in not making french toast.
Since I use Bailey's Irish Cream coffee creamer (natural ingredients ~5
different flavors) to make my french toast, I recommend you try using it
in your pancake batter-oh the flavor!

ps I think I could learn to like pancakes if someone served me a
thin-crusty-pancake, but the few pancakes I've eaten were all bloated
and mushy.

I love my old Hamilton Beach steam/grill number one because it does not
have a stupid drip tray-I prefer to keep all of that goodness right
there in the pan.

As for your sticky label problem, stop chewing your fingernails.

A thin crusty pancake? That would send my boner right to the ground.
