The local Kroger had 10 pound bags of leg quarters on sale for 39 cents
a pound so we grabbed a couple for the freezer. A couple of days ago we split one bag into two pots and began to make soup.... and that is as far as I got before Becca threw me out of the kitchen while she worked her magic. (I should tell you that before I met Becca, I seldom ate soup. Didn't like it, didn't know how to make it, didn't care for it. She made a soup believer out of me.) Pot #1 turned out to be Chicken Vegetable Soup. Had it for supper the other night and it was great. Becca cuts back on the carrots and adds extra corn because that is the way I like it. We had enough for supper and portioned and froze enough for another 3 meals. Today for lunch, Pot #2 turned out to be Tortilla Soup. It is a Mexican variation with peppers, onion, celery, tomatoes, avocado... yes... diced avocado IN THE SOUP!... chicken and topped with a little shredded cheese, green onion and crisp tortilla strips. It was so good I went back for seconds, and told her that I'm willing to have it again for supper. Don't know how much will be left for the freezer...... ........ but there is that second bag of leg quarters in there in case we run out! George L |
