Default low sodium soup

I was in the mood for soup the other day and perused the soup aisle, looking
for low sodium soup. (Bit of a contradiction of terms.) Anyway, I picked
up one can and said "reduced sodium" and when I looked at the details: 670
mg sodium-- per serving!

I did end up getting a couple Progresso Tomato Parmesan reduced sodium.
(Only 470 mg per serving.) The Tomato Parm is getting hard to find; the
Kroger doesn't have it anymore and neither does the Neighborhood Wal
Mart.... Way too much sodium but I can tell my doctor: "yes, I am reducing
my sodium intake. I got some reduced sodium soup just the other day."

Health Valley Organic makes a number of no salt added soups that range
from 30 to 100mg.

Amy's has some low-sodium soups. I haven't tried them (or
examined the labels). I do like the normal chunky tomato bisque.
A lot. Much better than Campbell's ever was. (I suppose I
can't indulge in that soup now that I am LCing, alas.)

I do have a few of those. Got a few split pea few days ago.... I got some
off brand a while back that said low sodium and was 10 mg! Unfortunately,
tasted like lima beans (though had no lima beans... I hate lima beans.)
Needed a good heaping of hot salsa to make it edible.

What perfect timing, Nancy.

As I speak, I'm making about 7-quarts of homemade vegetable soup. (the
house smells so nice!)

I made the chicken/turkey stock last weekend (from old bird parts saved in
my freezer. I removed almost all the fat and today am cooking all the
veggies. It's almost done. In about an hour, I'll throw in a few handfuls of
egg noodles to finish.

Put large (8-quart pot) outside on back porch to cool down for awhile.

Once cooled, I take out enough soup for today and the next few days. The
rest goes into plastic pint containers, then into the freezer with date
labels.

Oh, that sounds really good. Nice to have soup ready to heat when all
you want is something good and hot for dinner.

I don't have much in the house in the way of vegetables, but this
morning I got some green beans. I have sour cream and chicken broth.
I'm thinking I could make Melba's green bean soup today ...
