Default Favorite "Fasting/Meatless" meals?

The collision of the meatless Monday idea with the upcoming Advent
reminded me of the Friday meatless meals of my youth. We would have
vegetable soup, or mac and cheese, or omelettes. If we had fish, it
would be a breaded rectangle of some anonymous frozen ocean fish that
we heated on a baking sheet. Or else the dreaded salmon patties,
basically a meatloaf where canned salmon substituted for meat. The
resulting fishloaf was shaped into patties and fried.

Right now I would say my favorite meatless meal was eggplant
parmigiana, although we just had spaghetti squash with tomato sauce,
and salad.

I thought Advent was in the Spring before Easter.... you are confusing me!
I spent 20 years a devout Catholic. I'm pretty sure Advent is in the
spring. Correct me if I'm wrong, I'm sure someone here will.

PS I love eggplant parm, with spaghetti. Who ever invented that should win
the Pulitzer Prize for Cooking.

My all time favorite was from Pio Pio's in Lynnwood, WA. Sadly, they closed
some years ago. A whole pinto bean burrito with a side of pinto beans.
Heck, pretty much anything with beans is my favorite any day. Tonight I had
black bean soup for dinner at Ixtapa. It is not a thick soup. Rich with
onions, tomatoes and cilantro. Little bites of tortilla in it too. Oh yum!

that sounds divine! There used to be a flavoured tempeh in the health food
stores here, but don't see it anymore. I cut it up in squares for a xmas
party at work once, and I over heard people say it was delish.... Mustard's
Last Stand used to sell a Tempeh Burger (in Denver) that was to die for.

Ever heard of an Advent calendar? You open the little flaps and take out
the chocolate each day until Christmas. Well, if that's the kind you have
anyway...

Lent is in the Spring and so is Easter.

I remember the flaps... ex wife did that.

ok I was wrong. I stand corrected, and stand naked before the RFC
universe... I got Advent and and Lent confused. It's been a long while
since I was Catholic.

When I want a meatless meal, I base it around beans. Haven't tried
this recipe yet - but I've printed it out to try later in the week.

Just last week, I had a few repeat dinners of:
- 2 medium red potatoes microwaved then with butter, S&P
- sweet white corn cut from the cob and frozen last spring/summer
- a small amount of enhanced baked beans with brown sugar and onions
- 1/2 tomato chopped in 1/4" pieces
- 2 slices fresh bread with unsalted butter.

It was so tasty, I repeated it twice. I suppose various dieter people might
not approve (as this IS RFC) but I don't care. It worked well for me.

vegetable soup and cornbread
vegetable plate from a Southern meat-and-three restaurant -- okra, black-
eyed peas, squash, sweet potatoes, greens, cornbread
grilled cheese and tomato soup
falafel, hummus, pita
