Default Just made a Christmas Cake.

And what a PITA is was to set up.

A layer of brown paper, two layers of baking paper, on the bottom, as well
as the sides of the pan.

What's the deal with that?

Not only keeps it from sticking but from browning too much.

Nah, it was a supermarket bought DIY kit. Thought it had some
interesting flavours in it, so gave it a whirl.

buderim ginger, wattleseed, lemon myrtle, and a wild lime glaze.

Worth a punt :-)


I've just started on a second cake.

A mate gave me his recipe..........

1kg dried fruit, with some dried figs chopped in as well.

600ml Iced Coffee (milk drink)

2 cups SR flour.


Put coffee milk in fruit, let sit overnight, add flour, mix, pour and
bake.


He said it's pretty damn good, and he likes his cake :-)

Probably good, as it was baking for 3 hours at 150C.\
