Default Soup again!

This time I did not use a recipe or any actual broth and it came out better
than ever! Bean with bacon again but I used small white beans because I was
out of navy. Quick soak method and these beans cooked at 45 minutes even
though the package said 1-2 hours. I just added the onion, carrot, celery
and bacon to the water. Also some chopped dried shallots at the end because
it wasn't oniony for me. Perfect touch! Also two basil leaves, plenty of
salt, pepper, parsley, a can of chopped tomatoes and three squirts of lemon
juice. Really good flavor!

Oh this sounds really good. I can not use beans because they are too
high carb, but should be able to modify around the problem.

Question: is there a rule when to use lemon juice?

Just an aside: I have found the only lemon anything I like
comes from a fresh squeezed lemon. The bottled stuff
is disgusting. Maybe I am just weird. Love fresh lemon
on shrimp. Plus it deodorizes the air when it is cooking
(the arm candy hates the smell of fish). I add
more after is finishes cooking.

You might get around this by adding a lot more non starchy veggies and only
a small amount of beans. I have done this too.

This, I don't know. I was given the suggestion here when my last batch of
bean soup didn't have blended flavors. And it worked.

I prefer the fresh but they are usually too expensive. I will be getting
some this week though. Albertsons has them on sale and also limes for a
good price. I don't mind the bottled in stuff like this.

Seems hard to find navy here. I did find them. Just can't remember where.

I put lemon juice in split pea soup today because the recipe said to
do it. When it was fully cooked, I didn't taste any lemon. Frankly,
I don't know why it's in the recipe. I've never used lemon before and
didn't think it added or subtracted anything, so don't sweat it if you
don't have lemon on hand to use.

I get mine from Trader Joe's. They have bags of organic
lemons and organic limes. Six little ones to a bag for
$2.00.

I won't usually buy produce there. Bought too much stuff that was bad.

That is how I usually make it except that I don't normally add meat so I

Cool I am making soup at the moment too. Himself has gone down with a
nasty cold and a asking for creamy chicken soup.

I had tray of chicken thighs in the freezer so they are being roasted atm.
I chopped up 3 big onions and a potato and sweated them. Added some really
good chicken stock I had in the freezer and some of the mirepoix left from
making the meat loaf yesterday. When the chicken is roasted I will chop it
up, add it to the stock with double cream and blitz it all together with the
immersion blender! Ta daaaaa. He had better like it ....

btw speaking of meat loaf, the one we started yesterday is finished and a
request for the other one to be brought from the freezer ))) I guess it
won't be too long before I need to make some more

TJ's does have better prices for them, particularly for key limes. I
tend to get my lemons at the green grocer because he always has Meyer
lemons and they're usually 6 for $1.

Amen! I made 'Flu soup' a couple days ago. [wife & I both had the
shots- but her immune system is crapped out with chemo and a month of
pneumonia and it looked like she was getting 'flu-like' symptoms. . .
.. just in time, as mine started soon after I started the soup]

There was a piece on the news that was talking about all the natural
immune system boosters-
Chicken soup, turmeric, galangal, ginger, garlic, miso, kale, onion. .
.. [toss in mushrooms, carrot, seaweed, lemon, bay, & celery- and
you've got a tasty soup!]

I used a quart of stock I had and a 1/2 dozen drumsticks to start it-
simmered until the meat fell off the bones- Stripped them and returned
the bones to the pot.

I got the headache, the achy bones, the nausea-- but never bad enough
that I couldn't function for an hour or so at a time. Was it the
shot? The soup? The ederflower liqueur? The Sambucol? Who cares?
Dumb luck. Except for the shot all that stuff tastes great- and I
don't appear to be getting worse.<g>

If I'm making soup, you know, the kind where you are winging it? If I
have a half lemon or partially squeezed lemon in the crisper, I'll
just toss it in with the flavoring veggies and the soup bone.
Sometimes you can imagine you taste it and others not so much.

I like squeezing a lemon [or lime] into the individual bowls. Started
with an African sweet potato & peanut soup-- now I do it with a lot of
them. It does whatever salt does for a soup- brings up a lot of the
other flavors and gives it a bite.
