In another thread, people mentioned "yellow cheese" and
"white cheese", which is incomprehensible to me, Brit
living in Switzerland, so I checked the internet and
found this enlightening explanation on Wikipedia:

American has it's uses. There are other cheeses I like to order on my
restaurant burgers, but American is still the gold standard for
backyard burgers.

Oh, no - not that stuff. They can't even legally call it cheese, can
they? I thought it says cheese "food" or something like that. As a
kid, I knew there was something wrong with that stuff as soon as my
mother started buying it because it tasted nothing like the real
American cheese slices.

Land O' Lakes cheese is very popular at the delis around here, people
request it by name all the time.

Sheldon, are you familiar with Herkimer Cheese?

Haven't had any in years but it was very popular in Upstate NY when I
was a kid. I see from their website they have expanded their product
line since then.

Herkimer's was the first place I ever ate the combination of cheddar
cheese and apple.

I'd like to try that. I tried some LoL natural eggs and they were
some of the best I've tasted. I'll keep a look out for the cheese.

I've tried Tillamook American cheese. It's no better than Kraft,
which has become essentially tasteless. Tillamook tastes nothing like
it used to. I first tasted their once excellent cheese when it was
still available only in big wheels, back in the early 70s. Later, I
lived about 50 miles from their plant in OR. Now, they are no better
than any other US mega cheese. Kraft Cracker Barrel is better. So
sad.

Try the 2 year old aged white cheddar...for store bought it's really
good. the medium cheddar isn't all that great.

Herkimer is another brand of cheese that's popular. I used to visit
Herkimer in the Mohawk Valley often, I had a girlfriend who lived
nearby in Little Falls. New York is a big cheese making/dairy state.

Have you ever tried Beecher's? A friend gave us a huge basket of
assorted cheeses for Christmas that we are still enjoying.

Until recently "American Process Cheese" was legally cheese. There was
Velveeta that was not cheese. In the last couple of years the process
changed and/or the laws changed. Now the only "American process Cheese"
is the ones that come in five pound blocks and then only certain brands.

The quality of American Process was never high. it got lower recently.

I visited the cheese factory observation area. It filled me with dread.
If I worked there, aside from being depressed as a result of doing the
same repetitive work for hours on end day after day, I'd probably get beat
up by my co-workers for saying "who cut the cheese???" repeatedly for hours
on end day after day.

and I think it's only the cheddar.

Kraft "Deli Deluxe" is good too. I tried Kroger brand one time and
didn't like it at all. It had a strange aftertaste.

Trying to read through all this quoting is making me crazy..lol. Firstly thanks to Melanie for the cheese primer and the input from the audience. Not sure how many of us yanks recall back to when Brother Sir Ronald Reagan Maximus cut off the seasoned citizens from the food stamps and instead gave them a five pound block of free cheese each month? Well my Mama got it..and my dearly decesed DIL made a living off buying and selling the stuff on the black market. It was the best cheese I ever bumped into and had a rich cheddar flavor and a meltablility factor slightly tougher than Velvetter (The National Cheese of Texas of course..removing cowboy hat and getting misty eyed What we are looking for here is Land O' Lakes Sharp American Extra Melt. Made by yummpin yimmines in Wisc? Or some place like that. Write it down. All the best Mexican Restaurants use it for the cheese ration on everything. Now it can be hard to find. Restaurant Supply of the big wholesale distributors is the only place I ever heard had any. Next best is to tangle up good quality sharp cheddar with the Velvetter. That approximates the flavor and texture profile fairly close.

Okay, I'll buy whichever one I find first. If I buy Kraft first and
like it, I'll look for LoL. If I find LoL first and don't like it, I
won't bother looking for Kraft.
