![]() Picked up some beautiful tuna steaks today at a great price. I'd like to marinate/broil them. Any ideas for a marinade? I found a lot on the web, but I'm hoping for a personal recommendation. Something light, not too strong. Maybe a lime juice thing? But would the lime juice cause it to prematurely go the way of ceviche? Thanks, MK |

4 center cut fresh tuna filets 6 - 8 ounce each
2 tablespoons olive oil 1/2 teaspoon minced garlic 1 tablespoon minced shallot or red onion 1 fresh jalapeno, minced, seeds removed zest and juice from one lime 1/4 teaspoon ground cumin 1/2 teaspoon minced cilantro pinch of fresh ground black pepper Method Combine all ingredients except tuna in a large bowl and mix. Pour the mixture over the tuna steaks and let sit for 1 hour under refrigeration. Grill tuna on a pre-heated hot grill, approximately 3 minutes each side. Can be served with tropical fruit salsa and or black beans. ---------------------------------------------------------------------------- -------------------------------------- TARRAGON MARINADE: 3/4 c. plain low fat yogurt 3/4 c. mayonnaise 1 minced shallot 1 tbsp. minced fresh tarragon or 1/2 tsp. dried 1/2 tsp. pepper Juice of 1 lemon 3 tbsp. milk ---------------------------------------------------------------------------- ---------------------------------------------- Ingredients 1/2 cup dry sherry 2 tbsp grated gingerroot 2 tbsp low-sodium soy or tamari sauce 1 tsp light honey 1 tsp maple syrup 1 tbsp minced garlic 2 tsp dark sesame oil 2 tbsp minced cilantro 4 medium tuna steaks "Michael L Kankiewicz" > wrote in message ... > > Picked up some beautiful tuna steaks today at a great price. But, when I break down and buy them I marinate them in: soy sauce juice of a lime sesame oil tb of brown sugar I think that's it. Yum! Elaine |

It's also great for swordfish steaks. I marinate the steaks for a half hour or so and then throw them on the grill.
