Stir-fry a green vegetable -- broccoli, snow peas, or string beans.

Personally, I'd combine the veggies and rice into one dish, a
vegetable fried rice and of course you could scramble a couple of eggs
in there as well.
And of course you could stir fry some veggies on their own.
One thing I've found in regards to stir fries, fried rice etc. is to
put the minced garlic and ginger in towards the end of cooking. I
turn the stove off, add the G&G, stir and serve. Garlic and ginger
both lose much flavour during cooking. These two flavour enhancers
will also keep more health benefits through much less cooking.
Add soy sauce (I use kikkoman low sodium), some oyster sauce. I tend
to add soy sauce after the dish is plated. Top with some sesame oil
for fragrance.

I'd buy some long beans

and stir fry them.

Sounds good on the pig belly. How about a few egg or spring rolls to go with? Home made no doubt be best for the energetic types. Chung's Brand in the frozen food section should work for lazy folks.

I'd steam or boil some Chinese broccoli (gai lan) and dress it with a little oyster sauce. -aem

Mustard cabbage fried with a bit of Szechuan broad bean chilli paste, and Chinese broccoli steamed or fried with garlic and oyster sauce or soy sauce or black bean sauce.

And instant pickled cucumber.

And various pickled vegetables.

It's a bit trite, but I'd like Sichuan Dry-Fried green beans with
that.
