Default Mini Corn dogs


I made mini corn dogs for today's potluck after church. I made them
with the kids in mind but they were a big hit with the adults too.

I like just the way they are. I've got a 1/2 package of dogs in
the freezer that might find its way to a muffin tin.

That'll be the sodium fix for my wife today.

Unfortunately, there's no heat in the mass produced andouille that
most of us can easily buy. Maybe decent andouille can still be found
somewhere in the deep south, but not here. I don't even like the
house made "stuff" from otherwise supposedly good butchers, and I've
tried several. It would take a hunt - be expensive initially +
shipping and would end up not worth the time, effort and money
expended AFAIAC.

That's true. I can find some at the meat market in town which is
appreciably better than anything called andouille sausage with a
name-brand slapped on it at grocery store. IMHO, nicely spicy or not,
andouille doesn't really belong in a corn dog. (Or in this case a corn
muffin with hot dogs.)

I really liked that idea and plan to try it sometime. Probably this
summer. Seems right for a bbq type situation to me.

I'm not saying it wouldn't be good, it's just not a "corn dog".

If I were to use andouille (or Italian or any other highly spiced fresh
sausage) I'm thinking a fairly stiff cornmeal masa dough rather than
cornbread batter. Something along the lines of baked spicy sausage
appetizers in masa. This could turn into something fun

I'd just use a regular (but decent) hot dog the way koko used them,
nothing fancy.
