Mike's Sweet Potato Pancakes
You can add a bit more nutmeg or sweet potatoes, but only a bit. Exercise care when cooking these. They tend to burn more easily than regular pancakes, so turn them just a bit earlier than you would a regular pancake. Makes 10 pancakes. 3/4 cup flour 1 1/2 level tsp baking powder 1/4 tsp baking soda 1/4 tsp salt 1/4 tsp nutmeg 1 tsp sugar 1/2 cup mashed sweet potatoes 1 egg, beaten 1/2 Tbsp oil 3/4 cup milk 1 Tbsp butter, melted 2 Tbsp cream 1/4 tsp baking soda Sift the flour, baking powder, salt, sugar, baking soda, and nutmeg together. In a separate bowl, thoroughly mix the butter and mashed sweet potatoes. Beat the egg. Add the milk, oil, and butter to the egg and mix well. Add the sweet potatoes to the liquids and mix well. Once the mixture is fairly smooth, add it to the dry ingredients. Stir until the dry mixture is moistened. Fry on a hot griddle or skillet as you would a regular pancake. (see note above) -- Mike |

I can only speak from experience but potato pancakes weren't breakfast food in our house. They were made from leftover mashed potatoes and accompanied a meat and veggie with dinner the next night. I'd serve sweet potato pancakes as a starch accompaniment to a "southern style" dinner. Sweet potatoes don't need added sugar, but I suppose that is a matter of opinion. But no, I won't be doing this: "Add the milk, oil, and butter to the egg and mix well" then "add the sweet potatoes to the liquids and mix well." Sounds like a mushy mess to me! Jill |

These are breakfast pancakes. I'm working on a recipe for sweet potato pancakes which are similar to potato pancakes. The sweet potatoes and spices give this a slightly sweet flavor, so sweet toppings work well. I like them with butter and maple syrup, the wife eats them with strawberry or blueberry syrup. -- Mike |

I was off work yesterday, saw this and, since I had all the ingredients, I tried it. I cooked a sweet potato (boiled it) then made your pancake mix exactly as stated. I always follow a new recipe exactly the first time, then change it to my tastes after that. I *will* make this again sometime and I *won't* change it either. It's perfect as stated, imo. I tried one with butter only.....very good. Then I had one with butter and maple syrup....oh yeah! It was so good that I made 2 more along with 2 fried eggs and toast for a "breakfast for lunch."
