Default Enchiladas the easy way!

I make these often for my wife and kids. Usually I make Mexican rice or re-fried beans as a side dish and they always ask for more! These are easy to make and start-to-finish take me about 45 minutes, including baking.

I'd use more filling and only one tortilla per enchilada.

They are not what I consider enchiladas [corn tortillas], but I'd eat
yours in a heartbeat and thank you for making them. Mexican rice *and*
re-fried beans would make it a trifecta. But you know that.
