Koji is fungus that's used as a starter for fermentation.

So, this is fermented too? I wonder why the other one that cost twice
as much said "fermented" on the label (in English) but this one does
not? It's a rhetorical question. I don't expect you to have an
answer.

As far as I know, it's all fermented but I'm not too familiar with
gochujang. My wife and son are big fans of the real stuff. My
understanding is that the "real stuff" is real hot. My wife has some in
the deepest, darkest, areas of the refrigerator in an unmarked container
but I'm too chicken to give it a go. Brown mystery paste is a scary
thing. I'll check out what's available at the Safeway.
