Default Squeaky green beans.

Does this bother you? Do you notice it? I had a friend who said he
couldn't eat them because the squeaking bothered him. And I hadn't noticed
it until he said it. Of course they won't squeak if they are cooked to
mush, but fresh or frozen ones often will squeak when you eat them. I am
eating some now and apparently easily amused!

They have to be cooked "just right". Too little and they squeak; too
much and they're mushy. Of course, "just right" is a matter of
personal taste and the ability to hear/feel the squeak... both for me.

I don't like my beans squeaky. If you don't pick the beans so tiny, you
get more, and can cook them until they sort of turn gray and they will
still have texture and flavor. If you pick them small, just eat 'em
raw, they don't squeak that way either.

I buy frozen French-cut green beans to use in stirfry and I have to be
careful to cook them past the squeak stage. It sounds silly but I'm
serious.

Nice thought, but Julieeee's worries are legion. Will daughter throw tonite's
dinner against the wall? Will hubby go out for ciggies and not come back for
three months? Will her longtime shrimp allergy suddenly clear up, only to be
replaced by an irrational fear of mushy cereal?

Usually the beans are the protein (I know that's not much protein.)

Beans, oil, soy sauce (not much!), onions, peppers, and something
cabbagey if I have it, like peeled broccoli stems. Maybe some seaweed.
Either Sriracha or chilli-and-garlic paste, a little molasses, and
right at the end I'll add soaked cellophane noodles or cooked brown rice.

Every time I make it, it's different. It just depends on what I have in
the fridge to get rid of.

I don't like Sriracha as a table sauce, but it's good to cook with.

Green beans can't be cooked to mush despite what people say. I've had
green beans that have been slowly cooked for a good two hours or more
and I've never seen them fall apart and turn to mush. Even home
canned green beans remain intact when they're cooked like that.

They certainly CAN be cooked to mush, I've done it myself. However, I
don't buy the kind of green bean that needs to be cooked to gray to be
eaten. I buy Haricot Vert and Blue Lake. Neither one of them likes
to be cooked more than a couple of minutes, but they will squeak if
they are not cooked long enough.

are much better than others. Squeak away, if it comes to that.

I even ate canned green beans on vacation. We were kind of stuck
eating at this steak place. Very iffy place but my steak was
pretty good. However, I was surprised to be served canned green
beans. I ate 'em anyway. They dressed them up with bacon.

Best green beans I've had in a while were served at a barbecue place.
I ordered brisket and a side of green beans. Holy crow, they gave
me a mile high stack of green beans, if I wanted to sit there long
enough I would have eaten them all. Fresh and cooked to perfection.

Ha, I'll take 2 beans, please? They do look good, I've seen them
in the oriental market. This thread reminds me I haven't planted
my beans yet. To busy worrying about the tomatoes, cucumbers, etc.

Haricot Verts are hard to come by here. Central Market only seems to have
them in bulk, seasonally. I have gotten them at Winco but only in a huge
bag. Angela won't eat them. She loves any kind of canned green or wax
beans but not fresh or frozen, even if I do cook the hell out of them.

I always travel with canned green beans among other things. Good vegetables
can be hard to come by in restaurants and often the only kind of salad
they'll have is the Iceberg lettuce. If I have the canned stuff with me, I
can pop open a can of green beans, another of kidney beans and some pears or
applesauce and call it a meal.

That's the way I usually buy them. Trader Joe's has them in packages
(in season) but I'm anti-prepackaged vegetables, so they have to be
good and the prepackaged Haricot Verts at TJ's have always been good
IMO. I can buy them in bulk elsewhere, but it's not a chain.

I have never gotten good produce at our TJs with the exception of some melon
spears. Everything else has been rotten, even if not expired. So much so
that I rarely will shop there now. Mainly only go if my mom wants
something. The one in Lynnwood is the closest one to me and it's a PITA to
shop at. Have to drive around and around for a parking spot then usually
wait in line for a long time. Albertsons is practically next door and you
can get pretty much anything you want there.

Like I said... I hadn't noticed it until a friend mentioned it. He said he
couldn't eat them because the squeaking bothered him. Sort of like how my
SIL mentioned the squeaking basketball shoes. Never noticed that either but
now? Can't ignore it.

You know, Julie is the way she is, as are we all. If anyone doesn't
like the way I post, I would hope they would killfile me. None of us is
perfect, not in the way we live our lives nor the way we post. When I see
all the crap being thrown, I often wonder just how perfect the throwers are
.... certainly kindness is not one of their perfections.
