Default Chicken Pot Pie

That is what we are having for dinner tonight, Chicken Pot Pie. I am
making a top crust out of Crazy Biscuits.


Crazy Biscuits

2 cups flour
1/2 teaspoon salt
1/2 teaspoon cream of tartar
4 teaspoons baking powder
2 teaspoons sugar
1/2 cup non-hydrogenated shortening or butter
2/3 cup milk

Sift dry ingredients into a bowl. Cut in shortening until mixture
resembles coarse crumbs. Add milk and stir until dough follows fork
around bowl. Knead slightly. Pat out on lightly floured board and
cut. Bake on an ungreased cookie sheet at 450 degrees for 15 to 20
minutes, or until brown.

I make a pie crust dough that has some parmesan cheese incorporated in
it... but those crazy biscuits sound interesting.

I made something similar for Angela using whole wheat biscuit topping. For
the chicken part, it was cooked chicken breast cut in bite sized pieces,
peas, onions and celery. She won't eat cooked carrots. There was also
gravy.

Puff pastry always tastes good, and I have used that when I worked
outside of the house and I did not have time to make biscuits. My kids
preferred the biscuits, but I made Angel biscuits when they were growing
up. I do not have any yeast in the pantry, though.

If it uses yeast - it's a roll, not a biscuit, in my book.
