Roasted pepper spread reminds me of tomato sauce. It's delicious. It's kind
of sweet and fruity. Some people avoid roasted pepper spread because they think it's hot like crushed red peppers. Other people think it's bland like some roasted pepper soups and sauces. W. Pooh (AKA Winnie P.) |

Is it ajvar - if not, what is it? I think I have seen something like that at Central Market, sold on the aisle with the gourmet crackers. Odd that. They have crackers next to the cheeses and then other more standard crackers elsewhere. Anyway... I think I remember buying a jar and then getting it home and thinking it was rather meh. I didn't know what to do with it but it was with the crackers so assumed to eat it with them. Meh. |

There may be different pepper spreads out there, but ajvar certainly doesn't look like anything as a tomato sauce; it's not of such a thin consistency, and it's not as smooth as a tomato sauce. Ajvar as final product has a strong orangey cast. And while it is usually made of sweet peppers, ajvar isn't sweet at all, I mean not noticeably sweet as sweetened with sugar. Ajvar is plenty of roasted and minced or finely chopped pepper (peeled and deseeded), plenty of oil (preferably neutral taste), some white vinegar, all spiced with minced or finelly chopped garlic. Don't forget salt. Simmer at least couple of hours constantly stirring. That's all. Cayenne or other hot chilli powder is optional, if you like hot. If you can find sweet Anaheim chiles or perhaps sweet Newmex, I believe you'll make a good ajvar. There are people who like to make ajvar entirely out of moderately hot peppers which are very similar to regular anaheim chiles. PS. Some people like to add couple of roasted and minced eggplants in their batch. |
