Default Rice Salad

I was going through my collection of online recipes and decided to make
this. I found it interesting how the salad changed over the years. I made
the tadpole one, from 1910.

I used brown basmati rice so used the proportions of 2.5 cups of water for
each cup of rice. That's what the bag said to do. It also says to add salt
and oil. So when I made the dressing, I used more lemon juice than oil. I
used some tomatoes called Cocktail. Because they came in a package, I had
more than I needed. I doubled the recipe and used all of the listed
proportions except for the tomatoes. I added them all so not quite twice as
many. When I make this again, I will double all of the vegetables
(probably not the capers as they are strong tasting) but still use the same
amount of rice. It is very, very good but I suspect that I will be the only
one in this house who likes it.

I also chopped everything in a cup using my scissors. I usually do this
with chives and parsley but decided to try it with the tomatoes and the
green onion. Worked quite well! I would not do this for a large quantity
of tomatoes but was fine for two cups. Oh, I also drained the tomatoes
because once I added the salt to them, they became quite juicy. And the
recipe didn't say how much dressing to use. I am not a big dressing person
so I made about 3/4 of a cup and added it all. Did not save any for serving
but I think it will be fine. I don't think that was enough to make it
soggy.
