Default The Farm Stand

I went to the farm stand today on St. Helena. I got three nice yellow
squash and two nice zucchini. I also selected 10 small red "new"
potatoes. All for the whopping price of $4.50. Can't do that at Publix!

It's funny Janet mentioned my squash casserole recently. While I was
picking out yellow squash a woman (who looked older than I am) asked,
"What do you do with yellow squash? All I know to do is make squash
casserole." I told her I make that, too. But mostly I just slice and
steam it. This time I'm planning to stir fry some of it with chicken.
She thanked me.

They had sweet potatoes and small white potatoes, too. Green beans and
sweet corn. (I miss corn!) They also had some nice looking red and
green bell peppers. I don't buy them unless I need them for a specific
dish. But they sure were pretty!

I love yellow squash, in a casserole or any way I can get it. Do you
ever grill it? It's delicious in a grill basket, even better with the
addition of chunks of onion and grape tomatoes.

I put it into whatever stove-top dish I might be making. Well -- if
it makes sense to do so. Sometimes I cut up green zucchini, yellow
zucchini, red and green bell pepper and onions. Toss with olive oil,
garlic, salt and pepper. I use one of those grill baskets and grill
the veggies. Very tasty and pretty. Or, saute some sliced or chopped
onions and garlic. Add a can of chopped tomatoes (or fresh peeled
tomatoes) simmer a bit and add slice summer squash. Season to taste.

Oh yes, I've grilled it. YUM! I don't bother with a grill basket (I
don't own one). I just slice it lengthwise, brush it with a little oil
and sprinkle it with S&P. It's easy enough to turn without the basket.
I grill zucchini, too.
