Default Stuffed Vegetables

I ate some sweet mini-peppers stuffed with chicken salad for lunch. I
think I will stuff tomatoes with chicken salad tomorrow. Yum!

That sounds very good. You can also use tuna salad if you like it.

One of the best variants of tuna-mayo salad I've ever had was tuna salad
mixed with chopped commercially roasted red peppers bottled in oil.
The small amount of oil on the peppers subbed well for mayonnaise
and the combination was delicious.

Tuna sounds great. I was also thinking about cottage cheese. How about
pasta salad, rice salad, corn relish, couscous ... ?

I used to eat stuffed tomatoes all the time. Cottage cheese is good in
there too. And I did the baked recipe from Two Fat Ladies. I loved it but
nobody else did so haven't made it again.

Both Paterson and Dickson Wright affected unconcern with fat or
calories. Paterson also smoked heavily and, at one point, took the
opportunity to go out for a cigarette while a dish cooked in the oven.
Most episodes ended with her smoking a cigarette and drinking an
alcoholic drink. Several times references were made to the fact that
Dickson Wright, a recovering alcoholic, no longer drank any alcoholic
beverages.
Paterson died of cancer on 10 August 1999, one month after diagnosis.
The day before she died, she asked Dickson Wright to bring her a tin of
caviar but when Dickson Wright arrived at the hospital, Paterson had
already died. Dickson Wright said that after Paterson's funeral, she ate
the caviar as a tribute to her friend.

I did a riff on Kalyn's stuffed zucchini.

I made mine with fresh bread crumbs and an egg though. Same general
(90% beef, no turkey) ingredients, didn't measure anything - brown
rice on the side, not in it.

I usually cut them in half and fill each half with asiago and diced tender
salami, too easy to be true

You don't have to cut them that way. I did it just to get it out of
my system because they're so stinkin' cute. I'll go back to splitting
them in half lengthwise the next time I make stuffed zucchini.

BTW: the easiest way to scoop out zucchini is to use a melon baller
because it has a nice, sharp edge to it.
