Default Bacon grease question

Yesterday, I opened a 16oz package of Smithfield bacon that I bought
on sale about 2 weeks ago. I finally opened it yesterday and noticed
that the package date said, "Best used by Aug.4." As yesterday was
only 4 days later and I hadn't opened the package yet, I had no
worries.

So I cooked about 6 slices last night. And they tasted delicious! The
rest of the raw bacon, I divided up into 4 bags for future use and put
them in the freezer.

Once I cooked them, I then poured all the extra grease into a small
bowl to save for future cooking.

In the past (all of my life), this saved bacon grease turned white
like lard once it cooled. This batch didn't do that. It's yellow but
is crystal clear as vegetable oil. I've never had bacon grease look
like that.

Does anyone have any theories as to why this remained clear? As I
said....never seen this before.

It's august and your kitchen is warm. Put it in the fridge and it will
turn white and harden.

Dittos on putting it in the ice box. That is the best place to store it too. Dont leave it sitting out on the stove in coffee cans year round like we did when I was a kid. That could be unhealthy..lol. Now sure what the dip wad from Noo Yawk was babbling about.

Good advice. Very valuable thing, bacon grease. The can on the fridge is nasty.

That crap white lard in the store can't touch bacon fat.

Default Bacon grease question

To avoid a nasty, spilled mess, I stick mine in the freezer. I may never use it, but it's easier to scoop out that frozen chunk if I decide to toss it.

I have heard of people pouring bacon grease on the ground. Feeds helpful microbes or sumthn. Any comments on that?

Cooking grease saved in the freezer feeds birds in winter.
