All those cites are highly inaccurate. Scrapple contains muscle
trimmings that can't be sold otherwise Hog's heads are simmered to
tenderize and produce a gelatinous broth but only the muscle meat like
cheek and neck are contained in scrapple, the eyeballs are most times
removed before simmering, the brain is removed and used for other
pricier dishes, as is the tongue. Scrapple is a very inexpensive
dish, why it contains all that starch to stretch it further... tongue
brings a far higher price, as does liver so is not wasted on
scrapple... no law says one can't but not usually... tongue is
reserved for headcheese and headcheese ain't cheap... last time I
bought Boar's Head headcheese, maybe three months ago, I paid $7/lb.
The liver is used for braunschweiger, nat cheap either. I can't
imagine anyone would eat scrapple that contains liver, but there are a
lot of TIADers out there.

You know... just because you say the cites are inaccurate doesn't make
it so. It just makes it wishful thinking on your part. Try these:
