Default Winging it carrot cake.

We were ripping through carrot sticks for a while and as it seems to go in
this house, as soon as I buy a lot of something, people quit eating it.
So... I had carrots sticks that needed to be used by today. And let me
tell ya, it's a tad hard to grate them when they are sticks. I no longer
have a Mouli grater but that might have worked. Also as luck would have it,
I had an open can of pineapple! For some reason I decided to eat pineapple
last night. So this recipe worked very well.

I did add part of a grated Granny Smith apple that has been hanging around.
I bought one too many when I made those vegan apple fritters. Did not add
any nuts because Angela doesn't like nuts. I did add the peel from the
apple in the hopes of giving it a little more body. I also added a little
orange and lemon peel and would have added ginger had I thought about it.
Oh and I only made half of the recipe since we don't need a huge cake.
Actually we don't need any cake but I wanted to use this stuff up.

I have no cream cheese for the typical frosting. So I made a glaze with a
little powdered sugar, pineapple juice, cinnamon and ginger. I only tasted
the glaze. Yummy! I just took the cake out of the oven. It looks and
smells great. I will have to eat it vicariously because of the eggs.

They have an expiration date on them. Things that are cut up like that
don't keep forever.
