I found a piece in the freezer, just a small slice, from the last one I
made. It must have been a year old. lol Perfectly fine frozen in a
foodsaver bag. I just had it for lunch.

I oughta make it for the first time. I bought some lasagna pasta about
8 months ago with that in mind, but it hasn't yet made it to the top of
the list.

Well I could give you the components but I am sure you can make a killer bol
sauce. So, apart from that I make a good cheese sauce and layer them, not
forgetting lots of mozzarella on top

What's keeping you? It's easy. It's ain't cheap to make a make a
lasagna, but you get enough to feed a small army. I would make it more
often except that I don't like eating leftovers and especially dislike
eating them for several days.

Nothing, really! It's just never eventuated for some reason.
I've eaten plenty of lasagna in my time - some nice, some not so
nice... but I do know I love a good lasagna. Which makes it all the
more odd that I haven't personally made my own...

I'll make it very soon. I have a couple of Porterhouses that need
using ASAP, so will cook those tonight. If I have the white sauce
ingredients in the pantry I'll aim to make it tomorrow.

Don't you find that things like Spag Bol and Lasagna leftovers taste
better than freshly made?

Agree with eating the same thing for days, I don't make the huge pots
of stews like I used to any more for that reason - just enough for two
days... after that I need something different.

Only if Vilco promises not to look <g> I will be trying Vilco's recipe for
sauce over other pasta.

onion, red and yellow peppers diced
grated carrot
minced garlic
ground meat
herbs and seasoning
2 cans of chopped tomato
v. good slosh of red wine
a good squeeze of tom paste

sauté veg, brown meat. Add everything else. I cook it *very* slowly for
hours until it is thick. I always make it the day before I need it.

The cheese sauce is easy peasy. You need everything very cold. 1pint milk
in pan with 3 oz flour and 3 oz butter. heat up and keep stirring till
glossy. Leave on very low heat to cook through. When cooked, removed from
heat and beat in a couple of handfuls of grated cheese.

To assemble. I layer meat sauce, one layer pasta, spread half cheese
sauce, a layer of pasta, layer of meat sauce, layer of pasta, rest of cheese
sauce, sprinkle with more greated cheese and bake. Depends on oven .. till
heated through and cheese melted.

Traditional? who knows? My family love it

Okay, first report. She doesn't want meat sauce so scratch the bol sc.
There seems to be a seemingly endless series of "but's..." and "I don't
wanna's..." involved this. At the end of the day I'll let you know
either which lasagna she makes and how it tasted, or what lasagna she
wanted me to make and how well it suited her needs.

When a bachelor and on a very small budget I'd make a
vat of something and eat it for days. A cheap cut of
lamb was lamb breast. Cut it into pieces then build
layers of sliced potato, onion and lamb to near the top
of a large dutch oven, add salt and bay leaf then water
to cover. Cook very slowly for hours---eat it for days.
I never got tired of it.

Stews may be the exception to he repeat dinners. They often taste
better after they have had a chance to sit and been re-heated. My wife
always make stew the night before she plans to serve it then heats it up
for the meal.

For lasagne I strongly agree. It's a three days process: prepare the lasagna
pan on day one, eat lasagne freshly baked on day two and eat the leftovers
on day three. The best way to reheat them is bainmarie, but a quick way is
in a little pan with 1 mm of milk on the bottom, over very low heat and with
a tight lid on top.

I enjoy leftovers if the recipe is right. I'll make lasagna then eat
it for several days and love it each time. The rest I'll freeze to
enjoy some other time for a quick reheat easy meal.

I make Anne Willan's seafood version every xmas for my d-i-l. I use instant
pasta sheets rather than the ones you have to boil first.

which is OOP but cheap as "livre d'occasion" {:-)
