Crustless Pizza - a recipe from Mike Muth
This is pizza for those of us who are low-carbing. This is really a pizza-topping casserole. For variations, you could add a pinch of sweet curry or substitute wine for some of the water. You could also add ground beef and/or sausage for a meatier flavor. Serves 6. 260 Calories, 7 grams net carbs, 14 grams fat per serving. Adding hamburger adds 50 Calories and 2 grams fat per serving. 6 oz tomato paste (no added sugar or salt) 2 oz water or oil 1/2 tsp salt 1/2 tsp oregano 1/4 tsp coarse pepper pinch chives pinch parsley pin rosemary dash garlic powder 1/2 red pepper, diced 1/2 green pepper, diced 1/2 yellow pepper, diced 8 oz mushrooms, sliced 2 cups shredded mozzarella cheese 3 oz ham, diced small 2 oz pepperoni, diced small 1/2 onion, diced 4 oz hamburger or ground sausage (optional) Make the sauce several hours ahead of time and allow it to set in your refrigerator until you need it. Put the tomato paste and liquid (oil, water, wine or combination) in a bowl. Add the spices and stir with a fork or small whisk until the mixture is well blended. There are two ways to prepare the casserole, depending on how crisp you like the vegetables. Method 1 (crisper veggies): Pre-heat the oven to 350° F. Brown the hamburger or sausage (if you are including ground meat). Prepare the other ingredients. Place the peppers, mushrooms, ham, pepperoni, onion, and browned meat (if any) in an 8 x 8 casserole dish. Spread 3/4 cup shredded cheese over the veggies. Add the sauce. Mix well until the sauce and ingredients are evenly distributed. Sprinkle the rest of the cheese over the other ingredients. Lightly sprinkle with oregano. Bake uncovered until the cheese begins to brown, abut 20 - 25 minutes. Method 2 (softer veggies) Pre-heat the oven to 425° F. Melt a little butter in a skillet. Add the peppers, mushrooms, onions, ham, pepperoni, and ground meat. Sauté until the veggies are tender. Drain. Turn the mixture into the ungreased casserole dish. Spread 3/4 cup shredded cheese over the veggies. Add the sauce. Mix well until the sauce and ingredients are evenly distributed. Sprinkle the rest of the cheese over the other ingredients. Lightly sprinkle with oregano. Bake uncovered until the cheese begins to brown, about 15 - 20 minutes. -- Mike |

I have made similar, back when I could eat cheese but was also a vegetarian then so no meat in mine. I actually did mine in the microwave and I had to eat it with a fork but it tasted just like pizza. I used a small La Crueset casserole that I used to have. Put in a can of chopped tomatoes and some Italian seasoning. Then topped with with mozzarella and whatever other cheeses I had in the house. I often had asiago in those days because I could get it for cheap at the military commissary. Sometimes used cheddar. Nuke beyond the point of the cheese melting. It will actually get crisp. Perhaps I should have done it the other way. With the cheese on the bottom. Either way it was quite good! What ever happened to the pizza places that served crustless? I remember hearing about it one night on a late night radio talk show. I think we were living in CA at the time and someone from Pizza Hut was talking about test marketing it. I think he said they were doing it in NY. So I was excited to try it when we moved to NY. But I never saw it listed on the menu there and NY pizza for the most part is so danged good, there was no way I was going to get Pizza Hut stuff there. But for some strange reason, the pizza of choice there was Dominoes. It was at every kid party that we went to. And we went to one almost weekly. I wanted to tell the people to just spring for a couple more dollars and get the good stuff! Really, a cheese or one topping pizza was cheap! I just ripped the cheese off and ate that part. Husband usually ate my crust so it was all good. |
