Default Dinner Tonight ???


What to do with 2 bone-in, skin-on, chicken breasts? I am going to
have green beans with bacon vinaigrette and sour cream cucumbers as
sides. I can't think what way to prepare the chicken.

Each day I must prepare as many vegetables as possible. At this time
of year all plants in the garden are producing. I don't grow enough
to can or preserve in other ways.

I may make the tomatoes into sauce because my daughter gave me a
saucing device I haven't used yet. That was the plan for today until
the truck needed to go back to the dealer (dripping coolant -
probably from hose from recent repair.) But that means I have to go
back and forth in the other vehicle as well. sigh

Mint. I am making a pitcher of iced tea. (not sweet tea)
I slap the mint against the side of the sink a couple of times and
then place it on top of the ice in the pitcher and pour the hot tea
concentrate over all. Unless you want really strong minted tea, you
have to pull the mint in a little while.

Sounds nice! I'm not a fan of iced tea, but I do like mint in hot tea
occasionally.

I did what Jill suggested, the parmesan and bread crumbs. At this
time of year I am so focused on how to prepare vegetables in different
ways (often trying things on my veggie bucket list) that I suffer
brain seize about preparing the protein. I was really thankful she
responded so quickly.
The truck was back home quickly -- a no charge quick fix.

No charge! Bonus! Your dinner sounds wonderful too. I especially
liked the iced tea ideas in this thread.
