Default Must eat beans!

I guess I bought more than we could eat in a year. Dried ones that is. I
think part of the problem is that I had to mail order the dark kidney and
had to get 6 bags when 3 was what I really needed. And then I got some
really good deals on canned beans and I was using them more than the dried.
I also got a bag of white beans in my Christmas stocking which I did not use
because I already had so many. Those expired last April. I personally
would not have bought those if I were not going to use them right away but
the person who gifted them to me does not cook and has bad eyesight so
probably didn't know better.

I know that the expiration date means little on beans. Some of what I have
will be good for a while. The rest expired in June, July and Aug. All that
means is that they might take a little longer to cook. But those dates are
not so far gone so I expect that they won't really take any longer.

Am doing a pound of pintos right now and next week will do a big pot of
vegetarian baked beans. Then will probably switch to soup. I do have some
roast beef in the freezer that I was going to use for beef barley soup but
will also add some beans to it. I have the dregs of several kinds in
various bags so will cook those up and add them.

Need to come up with some other ideas for beans. Was thinking of some sort
of mixed dish like beans and corn with onions and peppers.

You should have orders some respirators.

I like bean burritos. I use hot refried but others would work. I add
Velveeta (only way I use it) and cooked chicken. Cover half of tortilla,
fold, cook 5 min or so in mw, cut up, eat. Love these!
