Default Breadcrumbs sans crusts?

I saw a recipe for meatballs the other day that called for fresh bread
crumbs made from bread "with crusts removed".

WHY!? That's my favorite part of the bread. But I've seen it time and
again. I wonder if this is some sacred cow that has been handed down for
eons yet really has no logic behind it. Or does it?
