Default Baked Potato Bar

We had another fundraiser lunch at school today -- a fun baked potato
bar. We had big, fluffy baked potatoes with a nice choice of toppings:
butter, sour cream, chili, taco meat, cheese, salsa, bacon, ham, cheese,
and parsley. I'm sure I'm forgetting a few toppings.

It sounds like a tasty fundraiser and a good idea.

For me, no taco meat, no chili or salsa on my baked potato, thanks.
Just a little butter, sour cream if I have it on hand. Crumbled bacon
with freshly grated sharp cheddar cheese. That's a good baked potato.

I don't think these were intended to be a side dish. It's a create your
own potato rather than create your own taco.

It depends on how I feel as to what I want on a baked potato. As a side
dish, most often just butter and salt. Sometimes sour cream, but I
don't keep that around all the time. If I'm making a loaded baked
potato I'll definitely add butter, the sharp cheddar and crumbled bacon.

I haven't made baked potato skins in a couple of decades. I suppose
they still show up on some restaurant menus.

I have NEVER made a "loaded" potato. They look/sound nasty. I also
don't bake gigantic potatoes the way a lot of people do - but the size
I bake (grocery store small russet - split in half) is often more than
we want to eat, so we eat the insides and I put the skins in the
refrigerator to make into an appetizer the next day.

I agree with you there. I like them plain with butter and s&p.
Occasionally, I'll put some sour cream on one or some sharp cheddar
but I'm not all that big with that either. I love salsa but certainly
NOT on a baked potato.

I would like that! Have only ever seen one of those in a restaurant in CA.
Was mostly a huge salad bar. But they also had some crappy pizza, pasta,
perhaps soup and the potato bar. Great if you love vegetables!

I believe Fresh Choice is the one we ate at in CA. Have not ever seen at
Golden Corral or Sizzler. The only other buffet chain we have here is Old
Country Buffet. They don't have it either.

Used to have an Old Country Buffet here and I liked it. Gone now. Even
the Golden Corral's are phasing out. Like them too. sf would turn up
her nose with either of those. I'm sure she would be embarrassed to
eat at one.

my favorite combo for the stuffed baked potato - which IMO is truly superior
to the standard version - is red onion, sharp cheddar, sour cream, and bacon

What a fantastic concept for a fundraiser and/or buffet bar! I can
think of a few more toppings for the potatoes

Onions/green onions/chives/shallots (raw and/or sauteed), herbed butters
of many sorts; various shaken seasonings/herbs (oregano, thyme, rosemary
and popular "dry rubs"); different chopped chili peppers, pepper flakes
and hot sauces (various ones, too); many choices of cheeses (as already
mentioned) like ricotta, mascarpone, parmesan, swiss, etc.; green
veggies like broccoli, asparagus, peas, beans, etc. (cough, cough -
hehehe!); different sauces like hollandaise/bearnaise and savory
gravies, too; and of course, the ever ubiquitous "ketchup/catsup" ;>
Even different mustards could be included, although those would not be
typical.

It'd be even more fun if already-cooked, deep fried or baked "potato
skins" (as an option?) could be available, too, with all the same
toppings to add on afterwards. In addition, the (s)mashed (or whipped),
scooped-out potato filling(s) from the potato-skins could be used to
make twice-baked potatoes, but then, that'd be a lot of additional labor
and more costly, albeit it very tasty

Try it with pulled pork, barbecue sauce, and hot sauce! Baked potatoes
are a nice way to use up little leftover bits and pieces, like chili,
taco meat, barbecue, meat and gravy, meatballs and marinara, sausage and
peppers, veggies, etc.

When I lived in New Orleans there was a little place out in Metaire called Pudgy's.
Their whole concept was based around myriad toppings for baked potatoes. It was killer good. You got a huge one pound baked potato and then went to the topping bar to load up.

Pudgy's probably sold out to these guys. They have some serious topping variations. But it looks like there's no topping bar anymore.

I have been there or somewhere similar in Jefferson Parish, a baked
potato restaurant in a quonset hut. I had a baked potato topped with
shrimp. The potatoes were huge.

What did they charge? I can see some galoot loading on all the meats to mountain heights and killing any profit.
