Default frozen creamed corn?


I found a recipe for chicken and corn chowder that looks interesting,
but it calls for *frozen* creamed corn - a product that is brand new
to me. I googled for images. McKenzie's seems to be carried at
Walmart which is a company I will not donate money to, so I won't pick
up the phone to find out if it's carried locally. Not sure where
PictSweet is found. I'm wondering if frozen creamed corn is a
regional product and I'm thinking it might be found in the South
because the recipe's title begins with "Southern".

If you're familiar with frozen creamed corn, which area of the country
are you in and which brand do you buy? TIA

It's available here in the Southeast in the frozen vegetable aisle. I don't like creamed corn, frozen or canned, so I was not impressed with it. Did you check your local store to see if they have it in stock? It may 'new' to you but they may have been stocking it all along.

It's right on par with canned creamed peas IMHO.

Seems to me she could use frozen corn and make a simple bechamel.

If I knew it was there why would I be asking about it? My grocery
stores don't carry whatever that brand of frozen biscuit is that you
like is either.

Not interested in what you like or don't like. Just saw the recipe
tonight, so I haven't had a chance to go to the store and ask customer
service if it can be ordered.

You've seen it in the South, so thanks for the information. It
confirms my guess.

I usta work a creamed corn line in a canary, way way back. Basically,
kernels of corn freshly stripped from a freshly picked cob are mixed
with a starch/sugar slurry and run through a "votator", a machine that
pipes the kernel/starch slurry through steam heated mixing tubes to
pre-cook the mixture. It is then finished cooked (pressure cooked) in
cans. I would imagine frozen creamed corn is like most frozen foods,
only pre-cooked (par) and you finish the cooking cycle.

Sounds good, but have never tried it. Use a part flour, part
cornstarch roux, I would think. Perhaps sub corn in a recipe for
creamed peas or spinach.

I've never seen it in this neck of the woods. Let me know if you find

I don't think it would taste right with a bechamel -- too heavy. Well,
not the way the old-fashioned creamed corn should taste. Original
creamed corn was creamed because the cobs were scraped to extract the
teeny bits and the milky juice. So, you would cut the kernels from
the cob and then scrape. Then when you would cook the corn a little
cream and butter would be added. This is cooked for a little bit and
the corn starch thickens the stuff a bit. Good eats!

I've never seen canned creamed peas.
But I like canned creamed corn, directly out of the can or in many
recipes... actually the only ingredient that makes cornbread edible.
I make a fantastic chicken pot pie with canned creamed corn
bechemel... also works fine for Chinese style hot and sour corn soup.

Just wondering what part of the country it's found in and it seems so
far that only one person knew about it. I know how to make creamed
corn. The fact that someone is selling it frozen surprised me. Since
you're so sensitive to what I write, it's best to put me in your kill
file. Stevie doesn't have the balls to do that, so he can suffer.

When we lived in NC, we got a brand called Cope. I think the company is
based in PA.

IIRC you sent me some Cope dried field corn for me to give to my dad.
He had fond memories of it growing up as a kid in rural Pennsylvania.

Hmm, "Cope" is a weird name for a food product...
sounds like something one buys at the pharmacy. lol
Progresso makes a chicken corn chowder, excellent. I like to keep an
assortment of Progresso soups for when I don't know what I want but
don't feel like cooking... so far all I tried have been good:

I agree. Progresso does a good job with canned soups. I always buy a

They do go on sale periodically and I stock up... this week the Hearty
varietals were buy two get three/$5... that's a buck a can, I bought
20. I like to have a decent soup around that also needs no freezer
space, and I like that Progresso needs no can opener, just pull the
tab.

Their regular line of soups are way too salty for me. So salty I can't
even stand to eat them.

I'm not on a low-sodium diet, and I sometimes add a bit of salt to foods
at the table. But sometimes I am puzzled (and disappointed) to see how
much salt is added to prepared grocery foods and restaurant dishes.
Boston Market is another brand that goes crazy with NaCl.

Progresso soups actually have a rather low salt content, I always need
to add some salt.
