Default change of dinner plans

I was going to do chicken in a tikka masala simmer sauce for dinner
but it is so cold and snowy I'm thinking soup. I don't have enough
milk or half and half for corn & bacon chowder so I think I'll do
chicken tortilla soup instead. I've got everything for that. When
you toast the corn tortilla strips for the soup, do you toast them
totally crispy like potato chips or something less than that?

Then, to go with, I think I'll also do some biscuits with sharp
cheddar and hatch-type chilis in the dough.
Some sort of toddy before . . .
It's supposed to go to -2F tonight. That means I'll be wrestling
Baxter into and out of his coat every time he needs to go out. I'll
have to go with him with a flashlight. He's getting old enough that
his night vision isn't so good and he doesn't like to go into the
shadowy parts of the yard. I can relate to that. I worry that he
will slip on the deck when it is icy. His hind legs are getting bum
-- heck, so are mine.
I hope everyone has power to heat their home and is safe.

I believe they are supposed to be crispy.

I feel for everyone who is getting hit with the freezing cold, much less
snowed in. I hope everyone has power.

I won't tell you what the temperature is here.

Weeeel... I'm not in charge of the weather. Keep warm! Enjoy your
soup! If it's any consolation, my SO has been snowed in for two days.
Fortunately the power has not gone out, which it has in so many places.

I use tortilla chips.

I tried tortilla chips after I had been using corn tortillas. I
missed the deep corny taste from the baked tortilla strips. I'm sure
I will use chips again in the future. It's just that I have the time,
stale corn tortillas, and want to turn on the oven )

Janet, I can buy tortilla chips that are just like home made... only
better. So, that's what I use.

Just saw the doing then in the oven part. NO! If you're going to
make chips, they should be fried. Nothing else will do! Frying can
be quite shallow, but it takes more oil than just brushing them with
oil and baking them.

Good luck with the dog-Baxter. Must be really hard. Do you have a
warmed bed for him to climb into when he gets back in? Even at 61
degrees my 15 year old cat and the 8 year old dog- seem to snuggle up
to something I bought from PETCO a decade ago.

best wishes.

I can't that I know of. I do get tortillas from a tortilla factory
that is local. all the chips are pretty much national brands. The
chips you buy, are they local?

Really. I had seen directions somewhere for baking and that is what I
have always done. I'll have to re-think this for future. I don't
know if I want the mess of frying. Thanks for the tip.

;o) You betcha! He likes mine a lot. Beyond that, I am at a loss.
He has never liked dog beds, etc. If he is on the floor, he insists
on a soft fuzzy rug like a bathroom rug. He likes to be able to
really stretch out.

Yes, they are local. Sometimes it's the brand name, sometimes it's a
"store brand" - but the are obviously the same product and (oddly) the
same price. Maybe the house brand package is heavier, I haven't
cared enough to look at the weight though. $2.99 for a big bag.

Set yourself up with a thick layer of newspapers and paper towels on
top of that and you'll be all set. That's why I'd rather just buy
them. They taste great and I don't have to do all that frying.

Frying does seem to do the best tasting job in many cases. I'm sure
tortilla chips would be one.

I just finished a bag of Tater Tots yesterday. At first I just
microwaved them (lazy way out) and then some I cooked in the oven on a
cookie sheet (much better). Yesterday, I deep-fried the last little
batch and what a difference. Nice and flavorful and crunchy. That's
the way to go.
