Default meatloaf today!

First time I've made it in almost 20 years.

Ground beast was on sale this week for $1.99/lb so a good time. I
bought 3.6 lbs this morning and just made it all up. It's in a 350
oven now for 1.5 hours or more. Rainy and cold here today so a good
time to run the oven with the extra heat and good smells.

For ingredients, I combined what said from 3 different recipes. I'm
sure it will be good and will provide many more meals for the future.
I'll eat some with baked or mashed potato and some green veggie. Wish
I would have bought some applesauce now. oh well.

I made it for the first time (last year?) with help from the posters here
I still make it but instead of making it into a loaf, I make it into meat
balls so I get the crustiness all the way around)

Better than meat-a-balles are puffed steppers.

Easiest way to make good applesauce is to buy a jar of unsweetened
chunky and add a bit of brown sugar to it. That was my gramma's way
but she used real apples.

It's not added TO the meatloaf, it's just a side on the plate along
with potato and green vegetable.

It is easy enough to core, peel and dice and apple and cook it with a
little water. You can add sugar if you absolutely have too, but
applesauce used as a condiment should not be too sweet IMO.

Just a tiny bit of brown sugar. Try it sometime. It was my gramma's
"secret ingredient." It took me 40 years to discover that taste.

Thank you for the reminder. I've not made it for a year or two. Made one
yesterday. Vey good! Looking forward to four or five leftover meals with
its remains.

You're talking ten years ago prices, now boneless chuck roasts cost
like $4.50/lb.

Another reason to grind your own... $5/lb for mystery meat, yikes!
Last week the Tops market in town had beautiful USDA Choice top round
roasts on sale for $4/lb and it was BOGO... I bought two, and next day
bought four more. I made up ten big burgers (10 oz), roasted one, and
still have two large roasts in the freezer... in fact yesterday's
dinner was burgers, on kaiser rolls.. were D-Lish... cats loved it.
Hey, at that sale price it's cheaper than Fancy Feast. I buy all my
meat at Tops, it's the same meat people as under the previous Grand
Union name, excellent meat and superb service. I know they buy their
pork from a local farmer and I'm pretty sure that's where they buy
their beef too.

We rarely buy applesauce if good apples are readily available. I know
that brown sugar is the appropriate sweetener.... if the apples are so
sour that they need sweetening. If you use the right apples it is not
needed. Sweet is great as a desert apple sauce, but an apple sauce to
be used as a condiment should have some tartness to it.
