Default The Last Two from the Old Recipe Box

My eyes are getting tired trying to decipher the old handwriting and
tiny-print newspaper articles. I just type them as they are written.

My grandmother definitely wrote this one.

Zucchini Nut Bread

3 eggs, beaten
2 cups sugar
3 teas. vanilla
1 cup oil
2 cups zucchini, shredded
1 teas. cinnamon
1 teas. salt
1 teas. soda
1/4 teas. baking powder
3 cups flour
1 cup chopped nuts
1 cup raisins or chopped dates

Mix together in a bowl the eggs, sugar, vanilla, oil and zucchini. Add
cinnamon, salt, soda, baking powder and flour. Fold in nuts, raisins or
dates. Mix well. Put in 2 bread pans greased and floured. Bake 350°F
for 1 hour & 10 minutes.

And these, which I remember and have made occasionally. This was
definitely my German grandma's method.

Potato Pancakes

1 egg
1 cup grated raw potato
1 teaspn grated onion
salt & pepper
2 Tablespns. flour

Drop by tablespoon on hot griddle with generous amount of shortening.
Fry golden brown both sides. Makes 6 cakes 2-1/2 inches in dia.

The recipes I've seen talk about wringing out the moisture by placing in
a dishtowel and literally wringing.

No onion from my German grandma. Potato pancakes was a specific meal
that included home made applesauce, sour cream cucumber salad and the
pancakes. One of my favorite meals. I'm going to have to do this
sometime in the new year. Thanks for reminding me. I tend to get
hung up on rotating specific meals/recipes.
