I haven't made this. But it looks quite outstanding. The other day, I was critical of this 'chef'; not because of his recipe, but because he looked kind of slow and awkward. Whatever, his recipe looks pretty good, and here it is...

Tangerine French Toast with Creamed Ricotta Ingredients: Serves 2 4 slices of challah bread cut one inch thick 3 eggs 4 tbsp sugar ½ cup 35 % crème ¼ tsp good vanilla extract ¼ tsp ground cinnamon 3 tangerine, zested ½ cup fresh creamed ricotta cheese ¾ cup fine maple syrup 2 tbsp butter Method In a large bowl beat the eggs with half of the sugar, vanilla extract, ground cinnamon, half the tangerine zest and half the 35 % crème, and place to one side. Next, in a small bowl take ricotta cheese, mix in the remaining 35 % crème, add a small amount of the tangerine zest ,remaining sugar and mix thoroughly, until the mixture is light and fluffy, then place to one side. Peel one tangerine and break apart the segments, removing any pith. Squeeze the juice from the remaining two tangerines, place the juice into a small non reactive pot (stainless steel or glass) simmer gently and reduce to a light syrup consistency, add this syrup the remaining tangerine zest, maple syrup, and tangerine segments warm gently and keep to one side. Soak the challah bread into the egg mixture until good and moist. Cook the bread in a buttered non-stick pan over med-high heat. When they are a light golden brown on both sides they are done. Next, place onto two warm serving plates and top with a generous scoop of the creamed ricotta. Spoon over the warm tangerine maple syrup and segments and you are ready to serve. Serving Suggestions You can make this recipe your own by adding toasted pecans, or almonds. Insted of orange try; raspberries, or strawberries for garnish. Replace challah with your favourite sourdough dough or Panettone Add a side of bacon or sausage for a delicious sweet and salty bite Relate } |
