We're gonna have fish (cooked on the 'braai') with mustard sauce, fried
onions and potatoes and some other stuff...

Tomorrow I will finally follow through on something I've been pondering
since November. I've got a pound of bay scallops in the freezer. I've
been looking around for recipes. I want it to be simple.

I'll probably pan-fry the bay scallops after a quick dredge in a light
seasoned coating. Quickly cooked in little olive oil & butter. The
small scallops won't take long to cook. I'm thinking sauteed spinach
with garlic as a side dish.

The kidlette is partial to pork chops - so seeing as how we have the fire

I would dry them, salt and pepper, drop them in a hot pan, get a nice
brown color on both sides and cook just a smidge. Remove from pan,
pour in some lemon juice to de glaze the pan and call it good. Well,
I do call it good and yummy. I like simple too.

Of course I'll thaw and dry them first. The directions on the bag say
to do that. I still think I'd like a little seasoned coating on them.

Hey - long time no see! Hope all is well with you and yours. Nothing
much has changed here in RFC. Some of the players are different, but
the general tone is still the same.

I'll know what's on the menu after I go to the grocery store.
Whatever it is, will be "child friendly".

I know we'll have a strata for breakfast and split pea soup later on
New Year's Day. I'm patting my self on the back for planning that far
ahead.

I was out shopping this morning. For New Years eve I picked up some
small lobster tails for beginners and a nice big rack of lamb for the
main course. For New Years day I have a prime rib. I would have liked a
bigger one but there was not much selection and the others were huge.

Everything has changed here ) I mentioned daughter is at the clinic in
Germany with the children and all the rest of the family will wait till they
can come home for our celebration together ... well eldest grandaughter has
decided she can't wait that long and she is coming on Thursday for a few
days)))))))))))

A potluck with friends. I'm bringing greens for salad plus several DIY
additions: candied pecans, orange bell pepper, strawberries, red onion,
grape tomatoes, sliced cucumber, a couple different dressings (bottled
-- sue me).

I'm so happy for you! This will be the "quietest" NYE I can remember
since I've been an adult. Son and family are staying home because he
and DIL have to work the day after new year's day, but we have oldest
GS with us. DD's hubby is under the weather, so she's coming without
him and bringing her kids. That's it. We've had friends over for NYE
every year we've owned this house... lately just two other couples
plus our kids & their families, but more people than we're having this
year. I must be getting old, because *I don't care*! Never thought
I'd say that. Huh. Times change, don't they.

I would sautee the spinach and garlic in olive oil (I love that) but
don't ruin the scallops with it. Sautee them in butter only (or butter
and a neutral oil) and be happy.

It was NYE here last night... we went fishing/partying (what a
combination!) at some ponds near the main river here.
Between us we caught five nice 3+ pound rainbow trout, which went on
the BBQ. A great evening had by all.

I asked but nobody could come up with anything they wanted. So... I baked
a par-baked loaf of French Bread. Husband had some broccoli and cheese,
leftover mashed potatoes with sour cream and chives and some kind of Apple
Bourbon Pork Chops. A pre-made Hormel product. These days those sorts of
things are about the only options for meat for him unless I know he will be
home and I buy something fresh that day or perhaps for the following day.
Coming up with meals is getting frustrating!

Daughter had some plain leftover mashed potatoes, vegan BBQ ribs and raw
carrots.

I haven't eaten yet but will have a hamburger patty with some lightly
sautéed green peppers and while onion along with a piece of that bread.

Later, I will make the maple popcorn that I bought.

Tomorrow I have little wienies in a bread sort of wrapping for husband.
Black eyed peas for me. I did make the potato salad but not sure if anyone
will like it. Other than that it will be scrounge up whatever you can find.
Need to do another restock, especially with things like meat.

I did pick up some UW Husky pasta at Bartells today but do not have the
ingredients to make the pasta salad recipe that comes with. I need red wine
vinegar a cucumber and a yellow pepper. I do need a red onion. I do have
one but would need to get another as that was purchased for green salad.
There is a seasoning packet in there. I will have to make that another day.

Cube steak is basically round steak that has been run through a
tenderizer. Generally browned then braised until tender, at least in my
experience. Definitely good with mashed potatoes and gravy.

Thanks, but I don't use a heavy tasting olive oil, nor a large amount.
It's mostly butter. Olive oil has a higher flash point that butter. A
little drizzle offsets the high temp when quickly pan frying [pretty
much anything] in butter so things won't burn. This isn't my first
attempt at cooking scallops.

Your dinner plate there in the 2nd pic. It looks just like my "better"
plates. Is it by any chance made by "Cook's Club?" I bought a good
set of them from a kitchen store at the mall many years ago. They were
inexpensive but plain white and appealing to me. I use them for
special occasions but I use cheap Corelle for everyday use.

I also use cheap grocery store bargain flatware for everyday use but I
do have a large set of Oneida stainless flatware that I break out for
special occasions. 20 years ago, the grocery store cheap flatware cost
me $10 for 20 pieces (4 sets of five). I bought two of them.

The Oneida stuff from the same era came as gifts from a friend each
christmas and birthday. At the same time, a five-piece set sold for
$40 each at the mall store that sold them.
